This zuppa is velvety & delicious! This protein-packed soup recipe is great to balance all of those rich, sugary, holiday meals.
Recipe: VELVETY LENTIL SOUP (VELLUTATA DI LENTICCHIE)
INGREDIENTS:
2 Cups Green Lentils
1 Cup Red Lentils
4 Pearl onions, cubed
2 garlic cloves, crushed
2 fresh thyme sprigs
2 cups heavy cream
2 pinches of grated nutmeg
Salt & Pepper
INSTRUCTIONS:
1. Put lentils, onions, garlic and thyme in a pan, pour in 8 cups of water, bring to a boil, then cover and cook over medium heat, stirring occasionally, for about 45 minutes.
2. Remove the thyme, Reserve 6 tablespoons of the lentils, then transfer the mixture to a food processor and process to a purée.
3. Pour into a serving dish and add the cream and whisk.
4. Season with nutmeg and salt and pepper to taste.
5. Stir in the set aside lentils and serve.
